OK, I admit information technology: This is not the nearly mutual skill you will ever need. I mean, how many Americans even consume frog, permit lone catch their own — especially outside of the Deep South?

But you should consume more bullfrogs,particularly if you live in the West, as I do. Bullfrogs, native to the Southeast, are aggressive, nasty invaders elsewhere. Here in California they are a scourge.

So to exercise our civic duty Holly, my friend Joel and his wife Mandy headed out to the ponds and marshes around Lake Tahoe. Yous heard correct: Tahoe. At 6,600 feet. This was some high-altitude frog giggin'. You lot can read more on that, and go my recipe for fried frog's legs here.

Suffice to say we came home with 14 big bullfrogs. I'd cleaned a frog exactly once before, when I was working in a eating place in Madison, Wisconsin. I call back it existence slimy, but not difficult. I was correct.

Most of the meat on a bullfrog is the hind legs — you tin can eat other parts, but most people don't. And you don't want to eat the skin, which is a) loose, b) very slippery and c) really, really strong. And so yous demand to pare and dismember your amphibians.

Offset, make sure your frogs are actually dead. Being amphibians, they are insanely tough. They will rarely exist fully dead when you lot spear them. They will only be more often than not dead. And yes, this is a lot like that scene in The Princess Bride. Whacking them against something hard, like a rock or physical or the side of your truck, works pretty well. And so does stomping them. Lamentable, but information technology's a tough matter to kill a bullfrog. They don't dice piece of cake.

Once they are all expressionless, some people drive a nail through a board to impale the frog'southward head; this is said to steady the frog while y'all skin information technology. I find this stride unnecessary. All you need is a cut board, and a willingness to take hold of a dead, slimy frog.

You'll also want kitchen shears, a minor, sharp knife, a set of pliers, water to wash the legs, a bowl for the legs and a trashcan nearby.

Get-go by snipping off the anxiety. Some people go along the anxiety on, simply I don't.

At present on to the just difficult part in the whole process: Slicing the pare around the frog's "waist." This isn't really that hard, merely the pare is very loose and very tough. I employ either the kitchen shears or a knife, depending on my mood.

In one case you have the skin cut all the mode around the frog, the residue is easy. Simply take the pliers and grab the loose skin on the frog'south dorsum. Anchor the frog with ane hand and yank the pare off with the other. It's like pulling the frog's pants down. Ew. I know…

Almost done. Now utilize the shears to chop the legs off (equally a pair) correct at the waist.

Chop again to separate the legs. I also trim any organ-y looking bits around the middle of the legs. At that place you take information technology! Easy-peasy. Once you lot go the hang of cleaning frogs, you can practise i in a minute or so.

When yous're all done, carve up the legs into 1 pound bags or and so, seal and proceed in the fridge for upward to five days, or freeze for upwards to a year.
